Quinoa (pronounced keen-wah) grains contain essential amino acids like lysine and good quantities of calcium, phosphorus, and iron. Quinoa grains are in general cooked the same way as rice and can be used in a wide range of dishes. According to Wikipedia:
The Incas, who held the crop to be sacred, referred to quinoa as chisaya mama or 'mother of all grains', and it was the Inca emperor who would traditionally sow the first seeds of the season using 'golden implements'. 2013 has been declared UN International Year of Quinoa.I think it tastes pretty good. It has an earthy flavour, similar to rice I guess but not as 'glutinous' as rice and is really quite light to eat, similar to cous cous. I cook it similar to rice. Just add 1 cup of quinoa to 2 cups of liquid and boil until liquid is absorbed. To add extra flavour, I usually cook it in stock, not just water. Here are some tasty recipes I'm dying to try. ReplyDeleteClever, clever lady! I NEED this post. I have tried quinoa a little similar to how I would do cous cous, and have also tried making quinoa porridge. They turned out ok, but not awesome. I haven't been rushing to make it again. I have some left over and these recipes are perfect inspiration.

I have been all over quinoa for about 10 years now. It was popular in the UK when I was living there. It is such a great food, I throw a few tablespoons in with rice, soup, casseroles, anything really. I made a slice with quinoa flakes today which turned out really great (though I think oats would have been nicer). I need to have a go at making some porridge out of them. I love gnocchi, I might have to give that recipe a go. Hope you are having a good week. xx

A friend at work has it with yoghurt and berries for breakfast... Sounds nice, might try that too!

ReplyDeleteI love quinoa with cranraisins walnuts and vanilla soy or almond milk for breakfast. Make it the beginning of the week by boiling in half water half vanilla milk of choice then heat up some every morning with a tad more milk!

ReplyDeleteI tried Quinoa Taboulleh on the weekend. I loved it. Just use the cooked Quinoa in place of cracked wheat, add loads of parsley, shallots, olive oil, lemon juice, garlic and finely chopped tomato.

DeleteI make the second quinoa burgers all the time! They're delicious and easy. I vary the spices and/or veggies in them sometimes. Yum yum yum!

ReplyDeleteThe first time I tried it like oatmeal. But I didn't care for the "raw" taste. The next time I roasted the grain and then boiled it. Much more flavorful. I've added it to my homemade granola and boiled it with rice. Now I have some new ideas to 5
